I originally got the idea for this recipe while playing with leftovers haha. When you’re growing up, people always say “don’t play with your food”…but I say PLAY! It’s how you learn! Anyway, I had around half a tomato, a slice of onion, and a piece of mango…so I threw them into a pot and tried to make a sauce. Well, I didn’t exactly make a sauce, but it came out as an unexpected, summertime jam that my mom and I absolutely love. Literally throw everything into a saucepan, cover, and in no time you will make this freshly tropical jam that will brighten up any dish :)
1 ½ tablespoon extra virgin olive oil
½ red onion
2 garlic cloves
1 large tomato
1.5 oz mango
2 teaspoons vinegar
Finely chop the onion, tomato, and mango. Mince the garlic.
Put the oil into a saucepan over medium low heat. Add all of the ingredients with a generous pinch of salt and pepper. Cover and cook for 10-15 minutes, or until the mixture is thick and everything is broken down.
Serve and enjoy!
