This recipe is so fragrant and so deliciously green that you will seriously want to eat it by the spoonful! It’s great to toss into pasta, pizza, lather on sandwiches, or even as a marinade. I love to just dollop a spoonful of it onto grilled chicken or fish. Whenever I make it, my folks walk into the kitchen and exclaim “something smells amazing!”…little do they know it only takes a few minutes to prepare!
4 cups baby spinach
½ cup asiago cheese (grated)
½ cup extra virgin olive oil
6 basil leaves
2 tablespoons pine nuts
2 cloves of garlic
Salt and pepper to taste
Toast the pine nuts in a dry skillet until golden, about 2-4 minutes over low heat. Remove from heat.
Take your food processor and add all of your ingredients to it other than the oil. Pulse a few times while you drizzle in the oil. When all the oil is added, pulse until it looks like a sauce.
