Guess who’s on a dietttt? This guy. Again. Perpetually. But that’s okay cause at least I don’t have too much to lose before long summer days running around on the beach. Time to cut out the crap, eat healthy, and workout! Woo! But me being me, I don’t plan on skimping out on great recipes and flavor. For example, instead of peanut butter, I’ll opt for a healthier alternative…almond butter. To save myself from even more calories, I decided to make a fresh batch! Who needs a store bought product when all it takes is a bucket of almonds, a pinch of salt, and a food processor. Simple enough that even a delirious dieter can do it. :)
Even though I’ve heard (and tasted) about almond butter for years, my mom has been on my case to make it since she saw Dr. Oz mention it on his show last year. Since I now plan to be serious about my diet, I thought I’d make it for both of us to enjoy on whole grain bread. Anyway, I dumped a bunch of almonds into our food processor and blended and blended and blended…and then blended some more. At first it was all crumbly before it started sticking together. Then all of a sudden the almonds gets super creamy as all of the oils seap out of the nuts. It’s a beautiful sight that made me feel bad for smacking the food processor when I thought it wasn’t working haha.
It’s delicious, healthy, and has big almond flavor. Like an upscale peanut butter. Try it out. Hopefully my mom will be pleasantly surprised when she comes home from work today!
**Omit salt if almonds are salted.**
3 cups almonds
Salt, to taste
Put the almonds and a pinch of salt into a food processor. Blend for 10+ minutes into your desired consistency.
