Lately I’ve been making a lot of pumpkin desserts, so I thought it was about time to post a savory pumpkin recipe. My mom always likes it when I make salad dressing from scratch, so I figured I’d surprise her with a fun salad dressing on the last day of November. Woa…and I just realized I haven’t posted a salad dressing recipe since March! Wah! Well I’m glad that’s about to change.
The combo of apple juice, oil, garlic, and pureed pumpkin are so delicious together. A hint of cinnamon makes it taste warm and inviting. You can drizzle it on salads, use it as a marinade, or even a light spread for a sandwich.
I totally used this vinaigrette for a amazing recipe…which I’ll reveal tomorrow! ;)
1/3 cup extra virgin olive oil
1/4 cup apple juice
4 tablespoons pumpkin puree
2 garlic cloves (minced)
1 1/2 teaspoon vinegar
1/4 teaspoon cinnamon
1/8 teaspoon salt
Cayenne pepper, to taste
In a medium sized bowl, whisk together all of the ingredients. Enjoy!
