Simple homemade salad dressings make the world of difference when tossed with fresh ingredients. My honey Dijon dressing takes a minute or two in preparation, but tastes like something fancy from a bottle. It’s slightly sweet from the honey, but with tang from the mustard. I rarely add salt in this recipe, just a pinch of pepper and I’m done! You can add a bit more oil if you want to thin it out.

2 tablespoons honey

1 tablespoon red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon extra virgin olive oil

1 garlic clove

Salt and pepper to taste (I only use a pinch of pepper)

Using a garlic press, press the garlic clove into a paste. Whisk together all of the ingredients in a mixing bowl.
