We’re all trying to eat healthier in our day to day lives. Something I started doing years ago was to use lettuce instead of bread (read about it in a Suzanne Somers book haha). Since then, it’s become a pretty popular trend with lettuce wraps even popping up in restaurants (ie PF Changs). Because lettuce is crisply fresh, I usually pair it with a light tuna filling. I add in chopped onion, red peppers, and cool cucumbers. Mix in some spicy pepper and ranch dressing and you got yourself a delicious lunch! You can use any kind of lettuce, but I usually use romaine (it “wraps” like a spring roll/burrito for easy eating). Don’t like ranch? Light Balsamic salad dressing works great in this recipe too!

 

12 oz tuna (packed in water)

3 tablespoon red onion (finely chopped)

3 tablespoons cucumber (peeled and finely chopped)

3 tablespoons red bell pepper (finely chopped)

4 tablespoons ranch dressing

Salt and pepper to taste

4-6 Romaine lettuce leaves

 

Drain the tuna.

In a mixing bowl, mix together the all of the ingredients (other than the lettuce leaves). Chill for 10-20 minutes, or until everything is cold.

Put a generous spoonful on eat lettuce leaf. Fold like a burrito/taco.

Serve and enjoy!
