Leftovers are inevitable when you cook for your family, therefore it’s always important to figure out how to use up said leftovers! For example, take meatballs…you can easily turn this into a delicious and well rounded meal. Since my brother doesn’t usually eat many vegetables, I like to sneak in some pan fried zucchini into the sandwich.

2 Meatballs

2 tablespoons pasta sauce

1 zucchini

1 tablespoon Italian bread crumbs

2 tablespoons ricotta cheese

2 tablespoons mozzarella cheese

¼ loaf of Italian Bread

Slice the zucchini into long slabs. Press the zucchini slabs into bread crumbs. In a medium sized skillet over medium-high heat, add 1 tablespoon of extra virgin olive oil. Put the breaded zucchini in the pan. Cook for 1-2 minutes. Flip and cook for 1-2 minutes more. Remove from the pan.

Slice the loaf of bread in half. On one slice, spread the pasta sauce. Layer the zucchini pieces on top of the sauce. Place meatballs on the zucchini. On top of the meatballs, put the ricotta cheese and then mozzarella.

Put this sandwich in an oven-safe pan/dish/skillet.

Place under broiler and broil until the cheese is melted and slightly browning.

Remove from the broiler and enjoy!
