I was watching TV the other day and saw a commercial with a Panini flatbread sandwich. Since I didn’t have the ingredients to make a flatbread, I thought I would use a tortilla on my Panini press instead! It turned out great, my parents absolutely loved it, and so I’m sharing it with you guys! The chicken becomes so flavorful from the marinade, with crisp and juicy fresh tomatoes and gooey salty cheese. Just be careful when you take a bite, the tomato juices can get quite hot!

3 tablespoons lime chimichurri

1 package thinly sliced chicken (4 pieces, from Perdue)

1 tortilla

½ cup mozzarella cheese

1 tomato (thick slices)

Marinate your chicken in the lime chimichurri for 1-3 hours.

Cook the marinated chicken on a preheated Panini press (closed) for 3-4 minutes, or until the chicken is cooked through.

Lay out a tortilla. On one half of the tortilla, lay out 3-4 pieces of the cooked chicken. Top with tomato slices and then the shredded mozzarella. Fold the empty half of the tortilla over so it looks like a half moon. Put it back on the Panini press, close, and cook for 5 minutes, or until the tortilla is crispy and golden.

Cut in half – serves 2 people.

Serve hot, enjoy!
