This recipe is healthy, but tastes decadent due to the candied walnuts. It’s slightly sweet from the grapes, slightly tangy from the dressing, and slightly salty from the feta. In the words of my mother “this salad is AMAZING!”
Double the recipe when entertaining on a special occasion – your guests will not believe you came up with something so tasty in mere minutes! If you don’t have feta cheese, I have also used crumbly blue and silky smooth gorgonzola with great success.
½ cup red grapes (seedless)
½ cup Candied Walnuts
⅓ cup feta cheese
3-4 cups baby spinach
2 tablespoon cranberry balsamic vinaigrette
Put the spinach into a large bowl.
Wash and slice the grapes in half. Add to the bowl.
Add the candied walnuts to the bowl.
Drizzle 1 tablespoon of the cranberry balsamic vinaigrette onto the salad. Lightly toss so everything is coated and glistening with the dressing.
Scoop the salad onto a serving plate.
Top with feta cheese.
Enjoy!

I tried this last weekend and LOVED it! I changed it up a little just by adding some grilled chicken, but its definitely a meal I’m planning to make it again. It’s light, refreshing, and healthy–thanks for posting this recipe Stephen!
