We had some extra oranges hanging around the house, so I figured a simple appetizer salad was in order. Since fruit is usually served as a sweet dish, I thought it would be neat to present it with a savory twist. The onion provides a nice crunch and the oregano is unique against the flesh of the orange. Overall it’s tasty, healthy, and refreshing.

2 tablespoons red wine vinegar

1-2 tablespoons red onion (thinly sliced)

1 ½ oranges

¼ teaspoon oregano

Pinch of salt (optional)

Peel and slice the oranges into wedges – place into a bowl. Add the remaining ingredients. Allow to sit for 5-15 minutes before serving so the vinegar can tenderize the onion.

Add the pinch of salt before serving. Best served chilled.
