A healthy sweet salad that cools your palate with fresh flavors – that’s what this recipe is all about. This salad just has a few ingredients, but each one is packed with flavor….which I think is really important to have in a salad. I love the combination of the sweet grapes with the cool crunchy cucumbers, mixed with salty feta cheese and a light dressing. Try using only one tablespoon of honey if you would prefer a less sweet dressing, but I really enjoy the extra sweet bite. Bulgur is full of fiber and healthy carbs, so this salad will fuel you up and keep you slim and trim. To make it like a “dessert” salad, feel free to garnish with some candied walnuts….it’s pretty tasty! Try it out!

 

2 cups bulgur (cooked)

1 cup cucumbers (quartered and seeded)

¾ – 1 cup seedless red grapes (halved)

½ cup feta cheese (crumbled)

1 garlic clove (minced

2 tablespoons apple cider vinegar

2 tablespoons extra virgin olive oil

2 tablespoons honey

Salt and pepper to taste

 

Combine all the ingredients into a large bowl. Add desired amount of salt and pepper.

Toss to combine.

Serve and enjoy!
