I think it’s important to know how to make classic recipes. Take the Caesar salad – pretty much everyone has had it before, and many of us have a bottle of Caesar dressing in our fridge ready to go. But when you make the dressing from scratch you really taste the flavors that the bottled version can’t ever capture. This recipe will remind you what a Caesar salad is supposed to taste like….to me it’s all about the cheese and saltiness.

1 garlic clove

1 ½ tablespoons extra virgin olive oil

1 tablespoon lemon juice (fresh!)

1 ½ teaspoon mayonnaise

1 ½ teaspoon Dijon mustard

2 anchovy filets

1 head romaine lettuce

3 tablespoons parmesan cheese (grated)

Croutons

Grate the garlic into a large bowl. Add the mayo, mustard, lemon juice, and oil. Finely chop the anchovy filets and add to the bowl. Whisk for 1-2 minutes, or until everything is combined. Add a pinch of pepper. Whisk to combine the pepper.

Chop the romaine lettuce and add to the bowl.

Add in the cheese and your desired amount of croutons.

Toss to combine and until everything is coated in the dressing.

Serve and enjoy!
