I roast a lot of vegetables at home. It’s really easy and don’t involve much work – just sprinkle the vegetables with some oil, salt/pepper, stick it in the oven and 20 minutes later you have deliciousness. It’s an amped up version of the traditional roasted broccoli. This time around, I add a sprinkling of garlic to flavor the broccoli and finish it off with cheese to give it a buttery/nutty note. I sometimes make a tray of this broccoli and snack on it while I cook – it’s that good.

2 heads of broccoli (cut into florets)

2 garlic cloves (minced)

2-3 tablespoons extra virgin olive oil

Salt and pepper to taste

¼ – ½ cup parmigiano-reggiano (shredded)

Preheat the oven to 375 degrees Fahrenheit.

Lay the broccoli on a baking sheet, sprinkle with the garlic, and then drizzle with the oil. Add a sprinkle of salt and pepper and then put into your preheated oven to bake for 15 minutes.

Remove the broccoli from the oven; sprinkle all of it with the cheese. Insert this under your broiler. Broil for 3-5 minutes, or until cheese melts.

Serve hot and enjoy!
