Plain rice gets boring after a while, so to keep things interesting I throw together a few simple ingredients with freshly cooked rice…like salty/nutty parmesan cheese! It’s super easy to make and only a few ingredients. Slightly goopey, slightly crunchy – it’s a great side dish when you need something quick!
1 tablespoon extra virgin olive oil
2 garlic cloves (mined)
½ onion (minced)
4 cups rice (cooked)
¼ cup milk
½ cup parmesan cheese
1 cup spinach (chopped)
In a large skillet over medium heat, sweat the garlic and onion in the oil for 2-3 minutes. Add the rice and stir to combine. Pour in the milk and parmesan cheese, stirring so everything gets coated. Toss in the chopped spinach until it begins to wilt.
Press down the rice so it makes a flat layer in the skillet. Sprinkle with the parmesan cheese and then put under the broiler for 5-10 minutes, or until the top becomes golden brown.
Serve hot and enjoy!
