A potato is one of the most versatile ingredients out there. A simple spud can be transformed into so many different dishes that you could probably go your entire life without every duplicating a recipe! In this dish, I slice the potatoes, partially boil them, layer the slices with red peppers and cheese, and then bake. It’s SO simple and has a clean, fresh taste despite all the cheese haha. I often make variations of this dish, stick it in the oven, and then go outside to grill. By the time I’m finished grilling, the potatoes are ready!


1.5 lbs potatoes

1 ½ tablespoon garlic (minced)

1 ½ tablespoon fresh rosemary (chopped)

4 oz sweet red peppers (sliced/chopped)

1 cup asiago cheese (shredded)

Salt and pepper to taste


Preheat the oven to 375 degrees Fahrenheit.

Bring a large pot of water to a boil. Salt the water.

Slice the potatoes. Add the potato slices to the water and boil for roughly 5 minutes, or until they begin to become tender. Drain.

Spray a 9×9 casserole dish with nonstick cooking spray. Lay out some of the potato slices. Sprinkle on some of the garlic, rosemary, red peppers, and cheese with a little salt and pepper. Repeat this process for an additional 2 layers. Top everything off with a little more asiago cheese and any remaining rosemary/garlic.

Cover and bake for 20 minutes, uncover and broil for 5-8 minutes.
