Tilapia is a really versatile fish…mainly because it is so mild. Whenever I cook tilapia for my folks, I like to make it have a little zing, some spice to wake up our taste buds. When I cook it for just my dad and myself, I add some cayenne to the recipe…but for my mom I nix that and just use the ingredients I list below. It’s such a quick recipe, but just make sure to keep an eye on the fish, broilers cook fast!

4 tilapia filets

½ stick of butter (room temperature)

½ teaspoon garlic powder

1 teaspoon chili powder

½ teaspoon oregano

3 tablespoons ranch dressing

Pinch of freshly ground black pepper

Turn your oven’s broiler on and allow the oven to heat for around 15 minutes.

While the broiler is preheating the oven, in a small bowl add the butter, seasonings, and ranch dressing. Mix to thoroughly combine. Set aside.

Place the tilapia on a nonstick baking sheet. Put under the broiler for 2 minutes. Remove, gently flip the fish so the other side can cook and reinsert into the oven for 1 minute. Remove the pan again, but this time coat the tilapia with the butter/ranch mixture. Each filet will get approximately a teaspoon and a half of the mixture. After the filets have been coated, place back under the broiler for 5-6 minutes.

Remove from oven.

Serve and enjoy!
