I came up with this white chocolate strawberry cookie recipe last summer and after my dad tried one, he practically forced me to make batch after batch. Continuously. I’m not kidding. He would come home from work with bags of white chocolate and buckets of strawberries and be like “here”. Addicted? I’d say so. Last summer I was basically Cinderella in the kitchen…where the “C” stood for “cookies”. Eventually his crazed cookie cravings died down (ie after I refused to bake), and I locked this recipe away in the back of my mind until last week. I’m not sure what possessed me to bake up a batch of this cookie crack, but I did…and guess what? They were gobbled up within the hour. The new rule around my house is one cookie per day or you’re banned from the cookie jar! We’ll see how long that lasts haha.

Anyway, it’s a simple idea – toss strawberries and white chocolate together for a summertime snack. Each cookie bakes up beautifully and they’re quick to assemble as soon as the strawberries are roasted (I have no idea if you can find dried strawberries in the store. They might be available in some random specialty food shop for an exorbitant amount of money, so just take a page out of my book and dry the berries in your oven. It’s takes about an hour and a half, but doing it yourself preserves the fruit’s fresh flavor.). Don’t forget to mix in the lime juice either…the citrus brightens everything up.

Overall these are sweet, summery, and really darn good. Enjoy! :)

 

11 oz strawberries (quartered)

3/4 cup granulated sugar

1 stick butter (room temperature)

1 egg

1/2 teaspoon vanilla extract

1/2 teaspoon lime juice

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cup flour

3/4 cup white chocolate chips (or yogurt chips)

 

Preheat oven to 300 degrees Fahrenheit.

Place a cooling rack on top of a baking sheet. Put the quartered strawberries on the rack and place in the oven. Bake for 90 minutes. Remove from oven. When the strawberries cool slightly, put them in a bowl.

Preheat the oven to 375 degrees Fahrenheit .

While the oven preheats, thoroughly mix the flour, baking soda, and salt in a medium sized mixing bowl. Stir in the white chocolate chips and dehydrated strawberries. Set to the side.

In another bowl, mix together the butter and sugar. Mix in the egg, lime, and vanilla extract.

Slowly add the flour mixture to the wet ingredients. Stir until well incorporated.

Scoop a tablespoon of the cookie dough and put onto a baking sheet lined with parchment paper (if you do not have parchment paper, spray it with non-stick spray). Place dough about 1 inch apart.

Put in oven and bake until golden brown, around 12-15 minutes.

Remove from the oven and cool slightly before eating.
