This recipe makes four light, simple, but incredibly delicious desserts. Parfaits are a great way to layer three (or more) flavors you love…in this case, I use vanilla pudding, granola, and blueberries. You can make your pudding from scratch or use the kind from the box, doesn’t matter. Since my throat was sore, I use my soft granola recipe that adds a tasty, oat/cake texture to the parfait. Then the fresh blueberries are pops of fresh flavor. Feel free to use a crunchier granola if you’d like.

***The exact amount you use per layer will depend on the size of the glass you use***

2 cups vanilla pudding

2 cups blueberries

1 ½ cups soft granola

Take a small glass, put about 1 ½ tablespoons of granola down. Then scoop about ¼ cup of blueberries on top of that. Spoon 2 tablespoons of pudding over the blueberries. Repeat for one more layer of each ingredient. Garnish with a sprinkle of granola and a blueberry or two.

Repeat for the other parfaits.

Chill for at least 20 minutes prior to serving.
