Seltzer takes Jell-O to a new level, as the little carbonation bubbles get trapped, suspended in the gelatin. When you take a bite, you have a small burst of effervescence on your tongue as it breaks free. It’s a nice change of pace. Just layer in some whipped cream and you have a really inexpensive dessert option that can be made ahead! This recipe is also great for when you have oral surgery – healthier than ice cream but more exciting than a cup of Jell-O!
1 package of strawberry gelatin
1 cup water
1 cup lemon lime seltzer
1 cup strawberries (sliced)
½ teaspoon lime zest
1 ½ cup whipped cream
Bring one cup of water to boil. Pour the hot water into a small dish containing the gelatin. Whisk until it dissolves. Stir in the seltzer, lime zest, and sliced strawberries. The liquid should be around ½ inch deep in the dish.
Put the dish into the refrigerator and chill for 1½ hours. Remove and stir the semi-set mixture. It will be chunky and allow the strawberries to be evenly distributed. Re-refrigerate for another hour.
Take a scoop of the gelatin and put it into a glass. Layer with some whipped cream. Gently layer with more gelatin, and then more whipped cream. Garnish with a sliced strawberry.
Repeat the process for two more parfaits.
Serve chilled and enjoy!
