So today’s post is short and sweet (pun intended). Once again I’m giving the classic rice krispie treat an update. What can I say, I just love marshmallow treats. They’re fun, quick to make, and everyone loves them, so why not? This time around the rice cereal is mixed with white chocolate and then topped with a green chocolate drizzle. Don’t be alarmed, the green chocolate didn’t come from aliens…although it is out of this world (haha could I be any cheesier right now?).

Chocolate pairs so well with marshmallows. And with the little crunch from the cereal, well, all that stuff equals the perfect snack. If you’re lucky enough to work with my parents, you probably even got to try these today. Each of them took a plate to share with their coworkers. But before you think I’m totally selfless, I made my parents pass out my business cards too. Stephen’s gotta pay those billz, yo!

How are you guy’s celebrating St. Patty’s Day?

 

3 tablespoons butter

1 bag marshmallows (10.5 oz)

6 cups rice krispies

1 1/3 cup white chocolate chips

Green food coloring

 

In a large pot over medium heat, melt the butter. Add the marshmallows and stir until melted.

Pour in rice krispies (with 1/3 cup of chocolate chips) and stir immediately until everything is coated in marshmallow.

Transfer to a greased casserole dish. Spread out evenly. Cool completely for it to firm up.

Meanwhile, melt the chocolate with the green food coloring over a double boiler (if the chocolate/fats start to separate, add in melted butter and a splash of warm milk. I ALWAYS “burn” white chocolate and need to do this haha). Once you get your desired shade of green, drizzle the green chocolate over the rice krispie treats.

Cool and then cut into squares.
