I had three things I wanted to use up in the pantry today: extra chocolate, extra marshmallows, extra cookies. It didn’t take long to realize that s’mores could be made! The light puffiness of the cookies brings just the right amount of crunch to the s’more cluster (graham crackers don’t really give the same effect). Your family will seriously think you bought these at a bakery, but they are so easy to make!
5 oz semi sweet chocolate
½ tablespoon butter
2 Stella Dora Roman Egg cookies
¾ cup mini marshmallows
2 oz white chocolate (optional)
Over a double boiler, melt the semi sweet chocolate with the butter.
Crunch up the Stella Dora cookies with your hands and put into the melted chocolate. Add the mini marshmallows and mix until everything is coated (Don’t over mix or the marshmallows will begin to melt).
Take ice cream sized scoops of the chocolate cookie mixture and place onto a parchment paper lined tray. Refrigerate for 20-30 minutes or until the chocolate has hardened. Remove from the refrigerator and drizzle with white chocolate (melt the white chocolate over a double boiler). Refrigerate again for 5-10 minutes.
Serve with hot chocolate or coffee and enjoy!
