Do you ever get in the mood where you don’t want to do anything but sit on the couch and eat cookie dough? Well…I decided I didn’t want to work today, so like the little kid that I am, I crossed my arms and stubbornly declared that I’m not haha. So what do I do when I just want to bum around the house? Eat! Yup, I’m literally just sitting on the couch eating cookie dough without any guilt. That’s right, this is a recipe for spreadable guilt free cookie dough.
I saw this recipe a while ago on Pinterest (follow me, follow me!) and instantly knew it was genius. It’s a cookie dough dip from an amazing blogger called Chocolate Covered Katie. She comes up with greats ideas for healthy alternatives to everyone’s favorite desserts. Genius! Never in my wildest dreams would I have thought of it. The creativity of this recipe has really encouraged me to stretch as a cook and come up with new crazy ideas. Food is fun! It’s nice to find a recipe online that makes you excited for endless flavor possibilities. I like that feeling. But anyway, I’m going on a tangent so lets get back to the cookie dip!
You’ll never guess what it’s made from – CHICKPEAS! Yup, think of this recipe as cookie hummus. Creamy, but sweet, and actually tastes like cookie dough that you can eat by the spoonful. I love it and literally have it smeared across my face right now as I watch reruns of The New Adventures of Old Christine. You guys know that I can never just rip off someone’s creation without making it my own, so my tiny itty bitty improvement to Katie’s original recipe is the addition of cinnamon (my family loves cinnamon in our chocolate chip cookies). So yeah! That’s the recipe for today…I’m gunna drift off into a food coma now. :)
1 can chickpeas (1 1/2 cups, drained and rinsed)
2/3 cup brown sugar
1/4 cup nut butter (peanut butter, almond, cashew, etc…pick your favorite!)
3 tablespoons oats
2 tablespoons milk
2 teaspoons vanilla extract
1/8 teaspoon baking soda
1/8 teaspoon cinnamon
1/8 + 1 /16 teaspoon salt
1/3 cup chocolate chips
Put all of the ingredients (except for the chocolate chips) into a food processor and blend until smooth.
Scoop into a bowl and mix in chocolate chips.
Serve with graham crackers, other cookies, or with a spoon!
