Someone in my family is always on a diet…we always want to lose a pound (or five) for an upcoming party or holiday…yet we never want to stop snacking! Due to this conundrum, I created a healthy cookie without using flour, adding sugar, or even including any eggs!
This cookie “dough” is an ideal base for adding dried fruits, nuts, and even vegetables – however my family definitely prefers a few chocolate chips!
**Adapt this recipe for your vegan friends by omitting the chocolate/honey and using carob chips**
3 bananas
1/3 cup apple sauce
1 tablespoon honey
1 teaspoon vanilla
2 cups oats
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
½ cup semi sweet or dark chocolate chips
Preheat oven to 350 degrees Fahrenheit.
Remove the peel from the bananas and mash the fruit in a mixing bowl with the applesauce, honey, and vanilla (I use a potato masher).
Add in the remaining ingredients and mix until everything is thoroughly coated.
Take teaspoons of the “dough” and place onto a parchment paper lined baking sheet (the cookies DO NOT spread, so make them to your desired thickness and shape…I prefer slightly flattened discs a little larger than a silver dollar and slightly thicker than an Oreo cookie).
Put into oven and bake for approximately 12-15 minutes (or until firm to the touch).
Cool on a cooling rack.
