We all have miscellaneous fruit hanging around the fridge, but we’re tired of only making smoothies out of them. Why not toss everything into an oven safe dish and get our Betty Croker on instead!? It’s such a fun way to create a new flavor combination, like I did with this black-and-blue-strawberry-mango mashup. The flavors of the fruit blend together and the sauce that it creates is so amazing, almost syrupy. The tender fruit is a nice contrast to the texture of the oats (which start to absorb all the fruit juices!). This recipe is fairly healthy too, as I use honey as a sweetener instead of sugar…so feel free to take a guilt-free extra serving! I like to cool it for 10 minutes before serving.

1 ½ cups strawberries (diced)

½ up blackberries

½ cup blueberries

½ cup mango (diced)

½ cup applesauce

¼ cup honey

½ teaspoon ground ginger

1 teaspoon corn starch

¼ cup flour

¼ cup rolled oats

2 tablespoons sugar

½ stick of butter

Preheat the oven to 375 degrees Fahrenheit.

In a loaf pan, add the blueberries, strawberries, blackberries, mango, ginger, applesauce, honey, and corn starch. Mix to thoroughly combine.

In a bowl, mix together the flour, oats, sugar, and melted butter. Sprinkle this topping onto the fruit.

Bake for 35-45 minutes.

Cool slightly before serving by itself or with vanilla ice cream.
