Although lace cookies are pretty popular, not many people make them. I was inspired to make these delicate treats while watching Giada DeLaurentiis’ show the other day. She used vanilla extract…but to make them my own, I switched it for almond flavoring and tossed in some more coconut. I even added an extra crunch by slipping some chopped almonds into the dough! These are super easy to make and quite delicious! Thanks for the inspiration Giada!
¾ cup light brown sugar
¾ cup sweetened, flaked coconut
½ stick of butter
¼ cup flour
2 tablespoons almonds (crushed/chopped)
½ teaspoon almond extract
1/8 teaspoon salt
Preheat your oven to 375 degrees Fahrenheit.
Combine all of the ingredients into a mixing bowl. Mix so everything is thoroughly combined (it will be a VERY crumbly dough).
On a parchment paper lined baking sheet, put tablespoon sized portions of the dough about 3 inches apart. Slightly flatten the dough out.
Bake for 8-9 minutes. Remove from the oven and allow them to cool completely. They will harden quickly!
Serve and enjoy!

A great recipe I can’t wait to try out. I love Almond Lace Cookies and those brave enough to try them! I wish more would.
I came up with my own version of a Almond Lace Cookies, or as I sometimes call them, Broomstick cookies. While different from your own, I think mine is a unique take on the dish. I’m new to the Food Blog scene and would love some feedback from a pro like you. Check out my recipe if have time.
