My throat was sore this week, so I wasn’t able to have any crunchy foods due to the pain :/. Because of this sad sad fact of my life, I decided to bake a soft granola crumble that I could snack on and add to my yogurt in the morning. It has a slight bite to it, but isn’t crunchy….it definitely has a more cake-like consistency. Overall this recipe is buttery and light, doesn’t have too much sugar, and is surprisingly addictive. So here it is!

2 ½ cups rolled oats

½ cup flour

¼ cup sugar

¼ cup applesauce

¼ cup honey

½ teaspoon baking soda

¼ teaspoon salt

Preheat the oven to 350 degrees Fahrenheit.

Grease a 9×9 inch oven safe dish.

Mix all the ingredients together. Pour into the dish.

Bake for 30-35 minutes, or until golden. Allow to cool completely. Flip dish over to remove the granola “cake” or crumble with a fork/your hands.

Add to parfaits, yogurt, fruit, or just eat as a snack. Enjoy!
