One of the few things I absolutely HATE in the kitchen is wasting food. Because of this aversion, I often come up with fun ways to use what most people think is junk. For example, I was peeling 5 pounds of potatoes recently…so I kept the skins. Normally the scraps would just go into our compost pile, but I’d rather toss them with some herbs and cheese and chow down! The peels become so crispy and delicious; you’ll wonder why you haven’t done it for years!
Potato peels (peeled from 5 lbs of potatoes)
3 garlic cloves (minced)
½ large red onion
2 teaspoons basil
1 tablespoon parmesan cheese
2 tablespoons extra virgin olive oil
Salt and pepper to taste (I like these a bit salty)
Preheat the oven to 400 degrees Fahrenheit.
Spread the potato peels onto a baking sheet. Toss on the minced garlic and thinly sliced onion.
Sprinkle with the oil, basil, and parmesan cheese. Sprinkle with salt and freshly cracked black pepper. Use your hands to mix everything around so that seasoning coats all of the potatoes.
Bake in the oven for about 25 minutes, or until crispy.
Best served warm, but it’s also great cool!
