My mom is obsessed with blueberries, so we always have them on hand. One day I thought it would be kind of cool to make oatmeal with a jazzed up color, and that’s when my blueberry oatmeal was born. It’s not super sweet like those oatmeal packets, but packed full of hearty and bright flavors.

¾ cup blueberries

3 tablespoons sugar

1 cup milk

¾ cup rolled oats

1 tablespoon butter

Lemon

In a small sauce pan over medium heat, add the blueberries and sugar. Cook, stirring occasionally, until the blueberries pop and it slightly resembles a chunky jam – about 5 minutes.

Add the milk and bring to a boil. Add the oats and the juice of half of the lemon (makes the color more vibrant). Cook until the oats are tender, stirring occasionally – about 8 minutes. Add the butter and allow to melt, 1 minute more.

Garnish with some yogurt chips, chopped cashews, and fresh blueberries (optional).

Serve hot.
