I don’t like eating big breakfasts…so when I eat in the morning, it needs to be light and something that won’t weigh me down. Because of that, a quick smoothie is great…especially when it’s really icy. I’m trying to get more blueberries into my diet, so I thought a blueberry smoothie would be great. I added some lemon zest to give it a burst of brightness with each sip. Because this smoothie is so low in calories, I always serve it with a dollop of whipped cream for some guiltless self-indulgence. It’s so good.
1 ½ cup blueberries
1 teaspoon lemon zest
1 tablespoon honey
½ milk
1 ½ cup ice cubes
1 tablespoon of light whipped cream
Rinse the blueberries. Add to blender.
Zest roughly half a lemon to get the teaspoon of lemon zest. Add to blender.
Add the honey, milk, and ice cubes to the blender. Blend until pureed, around 3 minutes. I like to start the blender on low and then increase the power to high after a few seconds.
Pour into a glass.
Garnish with whipped cream.
