banana pomegranate smoothiebanana pomegranate smoothieWoa. As soon as I sat down to write this shpeal, I realized I hadn’t posted a smoothie recipe since last February! That’s crazy. It’s time to change this drought!

So…this weekend I made a delicious smoothie with banana and some pomegranate juice (I’ve been on a pomegranate kick all year and have been trying to include it in some recipes). A little vanilla yogurt and ice keep it cold while also providing some protein. The smoothie is so thick and satisfying that I didn’t snack all day long…which is saying something, cause I love snacking! It’s filling, but not the gross I’m-about-to-burst filling. Instead it’s the type of full that you can only get from fresh fruit. I love it. Take a sip and you’ll experience big banana flavor with subtle pomegranate sweetness rippling through it. I was worried this recipe might be too boring, so to give it an extra layer of flavor, I tossed in half of an apple. The apple’s mild flavor blends perfectly with the other fruits.

So far I’ve only made this twice (last Saturday and then tried it out again this morning), but I have a feeling I’m going to continue to play with it. Maybe freeze it into ice pops during the summer? Hmm…who knows, but you guys will be the first to find out :)

**Use 1/4 cup pomegranate juice for thicker smoothie, 1/3 cup for a slightly thinner smoothie.**

 

6 oz vanilla yogurt

1 small banana

1/2 apple (peeled)

1/4 – 1/3 cup pomegranate juice

6-10 ice cubes

 

Put all of the ingredients into a blender and blend until smooth (about 2 minutes).

Garnish with banana slices and pomegranate seeds (optional).
