You know that Jack Johnson song Banana Pancakes? Well, it was stuck in my head so I thought I’d channel it into my cooking. These are healthy! All the flavor and moisture comes from the mashed bananas…I don’t even use butter or oil, instead I substitute in some sweet applesauce. They are a light and tasty way to start your day…or to “pretend it’s the weekend now” : ) !

1 cup flour

1 tablespoon sugar

2 teaspoons baking powder

¼ teaspoon salt

2 bananas (≈1 cup mashed)

1 cup skim milk

3 tablespoons applesauce

½ teaspoon cinnamon

In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon until thoroughly combined.

In another bowl, mix together all of the wet ingredients until thoroughly combined. Pour this mixture into the dry ingredients. Mix until combined and smooth.

Spray a large skillet or griddle with nonstick spray and place over medium-low heat. Using an ice cream scoop, put portions of the batter in the skillet. Cook around 3-4 minutes, or until small bubbles start to form. Flip and cook for 3-4 minutes longer.

Repeat for the rest of the batter.

Serve warm and enjoy!
