Whew! If I was complaining about having a cold Memorial Day weekend, the last two days have made me shut my trap. New Jersey has been hit by 90+ degrees of pure heat. It feels like a sweat lodge…so much so, that I’ve been “forced” to spend long lunches on the beach so I could cool off with the sea breeze (hard life, huh? haha). If the current temperatures are any indication of the weather to come, we are in for a HOT summer. Oh well, I guess I’ll just have to cool off with chilled fruit smoothies. :)

A couple months ago I ripped a recipe out of a magazine (yes, I’m one of those recipe hoarder people). Originally from the Vegetarian Times, the recipe lays out how to make an avocado mango smoothie. I was instantly intrigued. It’s simple, unique, and summery. Since I’m working from home today, I thought it would be a great time to try it out. I didn’t have the 1 1/4 cup of coconut water the original recipe calls for, so I used half water half juice and drizzled in a small amount of coconut extract for that tropical punch. Think of it as a way to amp up the sweetness of the mango. It’s just enough to get that relaxing island flavor we all dream about.

If you’re worried about the avocado tasting weird in a beverage, don’t. It makes the smoothie extra creamy…kind of similar to yogurt based smoothies. The nuts give a nice body too, while also providing a huge amount of omega-3s. It’s tasty and I’ll definitely make this smoothie again. I wonder what it would taste like as an ice pop…

1/2 cup water

1/2 cup juice (orange, grape, etc)

1/2 medium avocado

2 tablespoon walnuts

1 1/2 teaspoon lime juice

1 mango (peeled, diced, frozen)

1/4 teaspoon coconut extract

 

Put all of the ingredients into the blender. Blend until smooth.
