For some reason my mom likes to snack on parmesan cheese…so I figured she would love it if I made her some “chips”. It’s really tasty. The rosemary is subtle and brings an earthy taste to the salty cheese, and then you get a nice crunch from the pistachio. The balance of spices in this recipe is really great. Serve these crisps with salads, soups, as an appetizer, or just a snack…you can’t go wrong!

¾ cup shredded parmesan

1 teaspoon rosemary

1 teaspoon garlic powder

Pinch of ground black pepper

¼ cup crushed pistachios

Preheat the oven to 400 degrees Fahrenheit.

Combine the parmesan cheese, rosemary, garlic, and pepper into a small bowl. Mix to combine.

Take 1 tablespoon scoops of the parmesan mixture and place on a nonstick baking sheet. With your fingers spread the parmesan so it’s spread out in a flat layer (I like to form it into a circle so they look like chips, but any shape will work). Repeat for the rest of the mixture.

Sprinkle each circle with a pinch of crushed pistachios.

Place the baking sheet in the oven and bake for approximately 8 minutes (or until lightly golden).

Remove from the oven, cool, and enjoy!
