Fresh, light, tasty, and inexpensive – those four words describe how I like to eat. So when it’s time to entertain, why don’t I combine all 4 to make a delicious chunky salsa for my family and friends! We always have black beans around the pantry, which provide a creamy protein to the fresh veggie salsa. Simple ingredients that pack amazing taste. You can use any type of vinegar you like; I’m partial to white or apple cider vinegar. Take a scoop, I know you’ll be back for more!
1 cup black beans (drained and rinsed)
¾ cup tomatoes (diced)
½ cup corn (frozen, thawed)
½ cup red onion (diced)
¼ cup parsley (chopped)
1 teaspoon extra virgin olive oil
2 teaspoon vinegar
2 cloves of garlic (minced)
Large pinch of sea salt
Freshly ground black pepper
Combine all the ingredients into a large bowl. Mix to thoroughly combine. Cover with plastic wrap and put into the refrigerator for 20 minutes to an hour before serving. Serve with chips, over fish, in tacos/quesadillas, etc!
