Fancy homemade pizzas are the perfect way to spice up a weeknight (or weekend) meal. This recipe is for a pizza covered in fruity figs, sweetly savory caramelized onions, and crumbly creamy goat cheese. After baking in the oven you drizzle the hot pizza with honey to get an AMAZING flavor combination. Every time I make it, my mom goes nuts. Before she even takes the first bite, she asks me to make another one!

Fig pizza is perfect for entertaining or lounging around watching a movie. You can use it as an appetizer (cut it into little squares or make mini pizzas) or as an entree. It’s manly but also delicate. For some reason this pizza makes me think of a fancy cocktail party at a gallery opening. It’s just unique, perfectly balanced, and really delicious.

Now that I’ve stroked my food ego haha…..

I like to roll the dough out fairly thin so it gets super crispy, but I’ve also made it with thicker dough and it was equally as amazing. You can use either fresh or dried figs (when I snapped the pictures, I used dried).  You can cook the pizza on a stone, tile, or oiled baking sheet; all yield great results. Hmm…what else? Oh yeah…have fun! Pizza making is a really fun way to spend an evening with loved ones. Enjoy!

 

Caramelized Onions:

3 medium onions (halved and sliced)

1 tablespoon butter

1 tablespoon extra virgin olive oil

Pinch ground cumin

Pinch cayenne pepper

Pinch dried thyme

Salt and pepper to taste

Pizza:

8 oz pizza dough

≈5 figs (fresh or dried)

½ cup goat cheese

Honey (to taste)

 

Add the oil and butter to a large skillet over medium low heat. Put the thinly sliced onions into the pan with a pinch of cumin, cayenne, thyme, salt, and pepper (I literally use a pinch, but if I had to guess on the measurements, it would probably be around ⅛ teaspoon). Cover the skillet and cook for 30-45 minutes, or until the onions are soft and caramelized (stir once or twice while cooking). Turn off heat, reserve.

If you are using dried figs, submerge them in boiling water for around 10 minutes to soften them a little bit before slicing. Fresh figs you can just slice.

Preheat the oven to 425 degrees Fahrenheit.

Roll your pizza dough out to your desired shape, place on pizza stone or oiled baking sheet. Lay fig slices onto the dough. Spread out the caramelized onions. Then sprinkle it with goat cheese.

Put the pizza into the oven and bake for 18-20 minutes (I keep it in for exactly 20 mins). Remove from oven and drizzle with honey. Slice, serve, and enjoy!
