Fresh cucumbers. Fresh tomatoes. Fresh onions. Fresh herbs. Sounds like a farmer’s market, doesn’t it? But it’s not! Literally everything came straight from my garden (other than the vinegar haha). Cucumbers are a perfect summertime veggie – they’re crisp, cool, refreshing, and inexpensive if you aren’t growing them out back. This recipe is about using ingredients at their seasonal peak and letting their flavors sing. It is a simple salsa that can be prepares in minutes.

To give it a gourmet twist, I use black krim tomatoes from my garden to give it an earthy undertone. These tomatoes are naturally salty, so I don’t add too much salt to the finished salsa (great low sodium dish!). However, any tomato will be great…I can just imagine the freshness of cherry tomatoes in this! Mmm mm mm!

 

1 cup cucumber (diced)

1 cup tomatoes (diced)

1 garlic clove (minced)

2 tablespoons red onion (minced)

1 ½ tablespoons apple cider vinegar

1 tablespoon fresh oregano (chopped)

Salt and pepper to taste

 

Combine all the ingredients into a bowl. Mix so everything is thoroughly combined.

Cover with plastic wrap and place into the refrigerator for 1-2 hours before serving.

Serve and enjoy!
