It’s so simple, and so great. Every time I make this, my parents eat half of it before any guests even arrive! I like to use a super creamy roasted red pepper hummus, it feels decadent like a cheese spread…but it is incredibly healthy! It’s fresh, it’s summery, and it’s one you’ll love all year round.
1 baguette
3 tablespoons extra virgin olive oil
1 cup creamy roasted red pepper hummus
Take the baguette and cut diagonally into slices. Drizzle with the oil and bake in an oven preheated to 375 degrees Fahrenheit for around 8 minutes (or until golden).
Take the bread slice and top with 1 teaspoon of the hummus.
Top with around 1 tablespoon of the fresh black bean salsa.
Repeat for all the bread slices.
Serve and enjoy!
