It’s summerrrr tiiiime and the livin’ is easssy. That’s right folks, it’s officially summer! The sunshine washes away my rainy blues and I can finally get some color (this blogger has been one pale, sickly looking man up until now). Forget spring, as soon as summer comes around, so many delicious fresh flavors and produce hit the shelves. They basically seduce you into eating more than ever before. It’s fantastic. All year long I look forward to these seasonally light and healthy dishes. Who cares if you have second or third servings when the dishes are so good for you? Mm!
Take this recipe for example. My dad and brother LOVE mozzarella and tomato salads. Every time we go out to eat, at least one of them orders it. I always take a bite too (it’s actually one of the few times I can tolerate raw tomatoes). Layers of fresh mozzarella, sweet basil, tangy balsamic, and bright tomatoes are just too good to pass up. It’s classic and simple and perfect for entertaining. Especially when it’s portable. Yay for skewers! The next time you have a party, make these and save yourself some chopping time.
**Recipe makes 4 skewers.**
12 cherry tomatoes
8 fresh mozzarella
8 basil leaves
Balsamic vinegar, to taste
Salt, to taste
Take a wooden skewer and add ingredients. Alternate tomato, cheese, basil, etc.
Drizzle with balsamic vinegar or a balsamic reduction.
Sprinkle lightly with salt.
Enjoy!

I made these for my July 4th Party. So easy to do. They look colorful and festive, and everyone loved them. The balsamic reduction was so delicious.
