Oh my god, could I get any fatter this week? I swear, Hurricane Sandy completely ruined my diet last week and it’s thrown me off my game this week too! To top it off, NJ is being hit by a Nor’easter right now, which has left the roads around me kind of slick. I didn’t feel like driving in the snow, so for some reason I thought it would be a good idea to occupy my boredom by making bagel chips. Don’t get me wrong, it was a tasty idea, but my waistline needs a break! Hm…maybe after one more chip! ;)
Growing up, my parents often bought bagged bagel chips for my brother and me to munch on. Each salty garlicky bite was so satisfying that the entire bag would be gone within an hour. Sadly, I haven’t had them in years (a tragedy, I know). Over the weekend, 11 people were staying at our house since Sandy knocked out everyone’s electricity. My dad was kind enough to grab bagels from a local bakery for breakfast one morning…we had leftovers that were going stale…I was bored and wanted a snack…one thing led to another and I decided to crisp up some bagel chips! They’re fantastically crunchy with hints of garlic, cheese, and salt. I absolutely love them and can’t believe I wasted so much time away from this great snack food!
1 1/2 leftover bagels
1/4 cup extra virgin olive oil
2 garlic cloves
2 teaspoons Parmesan cheese
Salt (to taste)
Preheat oven to 325 degrees Fahrenheit.
Thinly slice the bagels into “coins”. Lay each piece on a baking sheet.
Using a microplane, grate the garlic into a small bowl. Whisk in oil and Parmesan cheese. Using a pastry brush, brush some of the garlic oil on each piece of bagel. Sprinkle with salt.
Bake in the oven for 12-18 minutes, or until crisp (they will crisp up as they cool).
