½ Vidalia onion (diced)

1 apple (peeled and diced)

¼ cup water

2 tablespoons apple-cider vinegar

Pinch of red pepper flakes

Extra virgin olive oil

Salt and pepper to taste

Dice onion and place in a small pot over medium heat with approximately 1 teaspoon of extra virgin olive oil and red pepper flakes. Stirring occasionally, until it slightly caramelizes – approximately 5 minutes. Add diced apple, salt and pepper, and liquids. Stir the mixture so everything can combine. Cover with the lid cracked open and cook over medium-low heat for 15 minutes.  Serve warm or cold. This spread is perfect for sandwiches!
