Slow cookers make everything taste great! All the flavors meld together and meats come out juicy and delicious every time. I cook chicken in a simple sauce, it basically falls apart, making it so easy to shred! Add a nice crusty roll and you have a fantastic meal! Consider this recipe a pull pork sandwich…made with the original white meat!

2 chicken breasts (frozen or dethawed)

1/3 cup water

1/3 cup bbq sauce

3 tablespoons red wine vinegar

2 tablespoons ranch dressing

1 teaspoon oregano

1 teaspoon chili powder

½ teaspoon ground mustard

½ large sweet onion (sliced)

1 cup sweet peppers (sliced)

Parsley (optional)

1 loaf of Italian bread or baguette or kaiser rolls

Add all the ingredients into your slow cooker (other than the bread, chicken, and peppers). Whisk this sauce together, then add the chicken. Cover and turn the heat to high. Cook for 2-3 hours.

Remove the cover and add the peppers. Stir to combine. Put the lid back on the slow cooker and let it be for another hour.

Taking two forks, shred the chicken in the sauce. Toss in some parsley.

Serve with the bread as a sandwich…or over toast!
