Baby spinach is a staple at my house – maybe I’m a wannabe Popeye the Sailor Man, who knows. Anyway, no sailor ever ate this salad while saving the world or he might have just stayed home to eat! The strawberries are fresh, onions spicy, and pine nuts slightly crunchy…when you drizzle on thick balsamic vinegar, everything absorbs its sticky tang and it comes to life. It’s a super simple salad with a super duper taste. I like to serve this with salmon, but feel free to add any protein you like.
3-4 cups baby spinach
4-5 strawberries (≈¾ cup sliced)
2 tablespoons pine nuts
2 tablespoons aged balsamic vinegar
Several thin slices of red onion
Large pinch of salt
Toast the pine nuts in a dry pan until slightly golden.
Toss the spinach, strawberries, pine nuts, and red onion into a large bowl. Drizzle over the balsamic vinegar, add the pinch of salt, and toss the salad so everything is lightly coated.
Serve with chicken or salmon or by itself!
